Executive Chef Gabriel Quintero brings global inspiration and bold seasonal flavors to Shaker + Spear at the Kimpton Palladian Hotel. Originally from Mexico, he trained at Aliat University and Instituto Ave Culinaria and earned his MBA from TecMilenio University. Before relocating to Seattle, he led the kitchen at Geraldine’s in Austin, Texas, where he was recognized by the Michelin Guide for his inventive takes on Texas fair food. With deep expertise in Mexican and Asian cuisines, baking, and large-scale dining, Chef Gabriel is passionate about creating dishes that offer elevated flavors and celebrate community. Since arriving in Seattle, he’s immersed himself in the city’s vibrant food culture—building relationships with local purveyors and continuing to evolve his culinary craft.
