Inspired by Old World Europe, Pennyroyal has the aura of a sophisticated speakeasy. There always something interesting to sip, from gin and tonics Spanish-style to local Washington Riesling to inventive drinks with names like Art Is Hard and Lovers Are Liars. If you’re with friends, order one of the sharable punch bowls — Sink to Swim serves two to four, deliciously combining strawberry tequila, Palo Cortado Sherry, mint tea, lemon, vanilla, and ginger beer. The all-day bites from Shaker + Spear next door are just as appealing, with options including a Pacific Northwest cheese plate, truffle parmesan fries, and various types of burgers (one that features bourbon, beer and bacon, aka some of the greatest things in life). The enchanting setting only enhances the experience, given the gold-framed paintings under brass lamps, banquettes done up in aubergine velvet, and reclaimed-wood bar topped with Carrara marble against a backdrop of dark blue walls.
